Khasi Curry (Mutton)

A traditional mutton curry from Jharkhand, often made with goat meat.
Ingredients
- Mutton (Goat meat): 500g
- Onions: 3, sliced
- Ginger-Garlic Paste: 1.5 tbsp
- Red Chili Powder: 1.5 tsp
- Coriander Powder: 1 tbsp
- Turmeric Powder: 1 tsp
- Garam Masala: 1 tsp
- Mustard Oil: 4 tbsp
- Salt: to taste

Heat mustard oil. Sauté onions until deep brown.

Add ginger-garlic paste and fry.

Add mutton and sear on high heat.

Add all spice powders and salt. Sauté (bhuno) the mutton with spices for 20-25 minutes.

Add hot water, cover, and pressure cook or simmer until the mutton is very tender.
