Chicken Jhor (Gravy)

A light and soupy chicken curry, Bihari style.
Ingredients
- Chicken: 500g
- Onions: 2, sliced
- Ginger-Garlic Paste: 2 tbsp
- Cumin Powder: 1 tsp
- Coriander Powder: 1.5 tsp
- Turmeric Powder: 1 tsp
- Black Pepper Powder: 1 tsp
- Mustard Oil: 4 tbsp
- Salt: to taste
Instructions

Heat mustard oil until smoking, then cool slightly.

Sauté onions until brown.

Add ginger-garlic paste and fry.

Add chicken and sear on high heat.

Add all spice powders and salt. Bhuno (sauté) well for 15-20 minutes.

Add 3-4 cups of hot water to make a thin gravy (jhor).

Cover and cook until chicken is tender.
