A simple, classic North Indian egg curry.
Ingredients
- Eggs: 6, hard-boiled
- Onions: 2, finely chopped
- Tomatoes: 2, puréed
- Ginger-Garlic Paste: 1 tbsp
- Red Chili Powder: 1 tsp
- Coriander Powder: 1.5 tsp
- Turmeric Powder: 1/2 tsp
- Oil: 3 tbsp
- Salt: to taste
Instructions

Heat oil, sauté onions until golden brown.

Add ginger-garlic paste and fry.

Add tomato purée and all spice powders. Cook until oil separates.

Add 2 cups of water and salt. Bring to a boil.

Add the boiled eggs (pricked with a fork) and simmer for 10-15 minutes.
