A slow-cooked shank of mutton, a delicacy from Old Delhi and Lucknow.
Ingredients
- Mutton Shanks: 1 kg
- Onions: 2, sliced
- Ginger-Garlic Paste: 2 tbsp
- Nihari Masala Powder: 3 tbsp
- Wheat Flour: 2 tbsp, mixed in water
- Oil: 1/2 cup
- Salt: to taste
Instructions

Heat oil, fry onions until golden.

Add mutton shanks and ginger-garlic paste. Sauté well.

Add Nihari masala and salt. Cook for a few minutes.

Add 6-8 cups of water, cover, and slow cook for 3-4 hours until meat is falling off the bone.

Add the wheat flour slurry to thicken the gravy. Simmer for 15 minutes.

Serve hot, garnished with ginger, chilies, and lemon.
