A light, yogurt-based mutton stew flavored with whole spices.

Ingredients

  • Mutton: 500g
  • Yogurt: 2 cups, whisked
  • Ginger-Garlic Paste: 1 tbsp
  • Fennel Powder: 1 tbsp
  • Dry Ginger Powder: 1 tsp
  • Whole Spices:: Cinnamon, cloves, black cardamom, bay leaf
  • Ghee: 3 tbsp
  • Salt: to taste

Instructions

    Pressure cook mutton with whole spices, salt, and ginger-garlic paste until tender.

    In a separate pan, add the cooked mutton and its stock.

    Whisk yogurt with fennel and dry ginger powder. Slowly add it to the mutton, stirring continuously.

    Bring to a gentle simmer (do not boil vigorously).

    Cook for 10-15 minutes on low heat.

    Temper with hot ghee before serving.
