Awadhi Mutton Korma

A classic rich and fragrant mutton korma from Lucknow.
Ingredients
- Mutton: 1 kg
- Yogurt: 1.5 cups, whisked
- Fried Onion Paste (Birista): 1 cup
- Almond and Cashew Paste: 1/2 cup
- Ginger-Garlic Paste: 2 tbsp
- Red Chili Powder: 1 tsp
- Coriander Powder: 2 tsp
- Kewra Water: 1 tbsp
- Ghee: 1/2 cup
- Salt: to taste
Instructions

Heat ghee, sauté ginger-garlic paste.

Add mutton and sear on high heat.

Lower heat, add whisked yogurt, salt, and spices. Cook for 15 minutes.

Add fried onion paste and nut paste. Sauté until ghee separates.

Add hot water, cover, and cook on low heat until mutton is tender (about 1.5 hours).

Finish with kewra water and simmer for a few more minutes.
