Galouti Kebab

Extremely soft, melt-in-the-mouth minced mutton kebabs, a Lucknowi specialty.
Ingredients
- Mutton Mince: 500g, very fine, with fat
- Raw Papaya Paste: 2 tbsp (tenderizer)
- Ginger-Garlic Paste: 1 tbsp
- Fried Onion Paste: 2 tbsp
- Kebab Masala Powder: 2 tbsp (a mix of 20+ spices)
- Rose Water: 1 tsp
- Ghee: for frying
- Salt: to taste
Instructions

Mix the fine mutton mince with all ingredients except ghee.

The mixture should be very soft. Marinate for at least 4-5 hours.

Heat ghee on a non-stick tawa or griddle.

Carefully shape the soft mixture into patties and place them on the hot tawa.

Cook on low heat until each side is dark brown and cooked. They are very delicate, so handle with care.
