Chicken Biryani (Lucknowi)

A subtle and fragrant biryani, where meat and rice are cooked separately and then layered.

Ingredients

  • Chicken: 750g
  • Basmati Rice: 500g
  • Yogurt: 1 cup
  • Ginger-Garlic Paste: 2 tbsp
  • Fried Onions: 1/2 cup
  • Mint & Coriander Leaves: 1/2 cup
  • Saffron Milk: 1/4 cup
  • Kewra Water: 1 tsp
  • Ghee: 4 tbsp
  • Salt: to taste

Instructions

    Cook chicken in a yogurt-based gravy (yakhni) until tender.

    Boil rice in salted water until 80% cooked. Drain.

    In a heavy-bottomed pot, layer the cooked chicken and rice.

    Top with fried onions, mint, coriander, saffron milk, and kewra water.

    Seal the pot and cook on low heat (dum) for 20-25 minutes.
