Awadhi Chicken Korma

A fragrant and rich white chicken korma from the Awadhi cuisine of Lucknow.
Ingredients
- Chicken: 1 kg
- Yogurt: 1.5 cups, whisked
- Fried Onion Paste (Birista): 1 cup
- Cashew and Almond Paste: 1/2 cup
- Ginger-Garlic Paste: 2 tbsp
- White Pepper Powder: 1 tsp
- Mace and Nutmeg Powder: 1/2 tsp
- Kewra Water: 1 tbsp
- Ghee: 1/2 cup
- Salt: to taste
Instructions

Heat ghee, sauté ginger-garlic paste.

Add chicken and sear well.

Add whisked yogurt, salt, and pepper. Cook for 10 minutes.

Add fried onion paste and nut paste. Sauté until ghee separates.

Add 1 cup of water, cover, and cook until chicken is tender.

Finish with mace-nutmeg powder and kewra water. Simmer for 2 minutes.
