A fiery and spicy chicken appetizer from Andhra, known for its bold flavors and use of green chilies.

Ingredients

  • Chicken: 500g, boneless, small pieces
  • Green Chilies: 10-15, slit (adjust to heat preference)
  • Ginger-Garlic Paste: 1.5 tbsp
  • Onion: 1 large, sliced
  • Curry Leaves: a handful
  • Turmeric Powder: 1/2 tsp
  • Coriander Powder: 1 tbsp
  • Garam Masala: 1 tsp
  • Lemon Juice: 2 tbsp
  • Oil: 3 tbsp
  • Salt: to taste

Instructions

    Marinate chicken with salt, turmeric powder, and ginger-garlic paste for 30 minutes.

    Heat oil in a pan. Add sliced onions and sauté until translucent.

    Add curry leaves and green chilies, and fry for 2-3 minutes until the chilies start to blister.

    Add the marinated chicken pieces and cook on high heat for 5-7 minutes until sealed.

    Add coriander powder and mix well.

    Cover and cook on low heat for 15-20 minutes, or until the chicken is tender and cooked through. Stir occasionally.
