A rich and creamy egg curry made with a coconut and cashew paste.

Ingredients

  • Eggs: 6, hard-boiled
  • Onion: 1, finely chopped
  • Tomato: 1, chopped
  • For Paste:: 1/4 cup coconut, 8 cashews, 1 tsp poppy seeds
  • Ginger-Garlic Paste: 1 tsp
  • Red Chili Powder: 1 tsp
  • Turmeric Powder: 1/4 tsp
  • Garam Masala: 1/2 tsp
  • Oil: 2 tbsp
  • Salt: to taste

Instructions

    Grind coconut, cashews, and poppy seeds to a smooth paste.

    Heat oil, sauté onions until golden.

    Add ginger-garlic paste and tomatoes, cook until soft.

    Add spice powders and fry for a minute.

    Add the ground paste and cook until oil separates.

    Add 2 cups of water and salt. Bring to a boil.

    Make slits on boiled eggs and add them to the gravy.

    Simmer for 10 minutes. Finish with garam masala.
