An Andhra take on the classic Kashmiri Rogan Josh, with more heat.

Ingredients

  • Mutton: 500g
  • Yogurt: 1 cup, whisked
  • Onion Paste: 1/2 cup
  • Ginger-Garlic Paste: 1.5 tbsp
  • Red Chili Powder (Guntur): 2 tsp
  • Fennel Powder: 1 tsp
  • Dry Ginger Powder: 1/2 tsp
  • Ghee: 4 tbsp
  • Whole Spices (Cardamom, Cloves, Bay leaf): as needed
  • Salt: to taste

Instructions

    Heat ghee, add whole spices.

    Add onion paste and fry until brown.

    Add ginger-garlic paste and sauté.

    Add the mutton pieces and sear on high heat.

    Lower the heat. Add whisked yogurt gradually, stirring continuously.

    Add all spice powders and salt. Mix well.

    Add 1 cup of hot water, cover, and cook on low heat until mutton is very tender (about 1.5 hours).

    The gravy should be rich and red. Serve hot.
