A spicy mutton fry, cooked until tender and coated with a thick masala.
Ingredients
- Mutton: 500g, boneless, cubed
- Onions: 2, thinly sliced
- Green Chilies: 4, slit
- Ginger-Garlic Paste: 1.5 tbsp
- Red Chili Powder: 1.5 tsp
- Coriander Powder: 1 tbsp
- Black Pepper Powder: 1 tsp
- Turmeric Powder: 1/2 tsp
- Oil: 4 tbsp
- Salt: to taste

Pressure cook mutton with salt, turmeric, and a little ginger-garlic paste until 80% cooked. Drain and reserve stock for other use.

Heat oil in a wide pan. Fry the sliced onions until they are crisp and golden brown.

Add the remaining ginger-garlic paste and green chilies. Sauté.

Add the cooked mutton pieces and fry for 5 minutes.

Add all the spice powders (chili, coriander, pepper) and mix well.

Fry on medium-low heat for 15-20 minutes, until the mutton is well-roasted and the masala coats it thickly.

Garnish with curry leaves and coriander. Serve hot.
