A dry and spicy chicken preparation dominated by the flavor of black pepper.

Ingredients

  • Chicken: 500g, with bones
  • Black Peppercorns: 2 tbsp, coarsely crushed
  • Onion: 2, sliced
  • Ginger-Garlic Paste: 1 tbsp
  • Green Chilies: 3-4, slit
  • Turmeric Powder: 1/2 tsp
  • Fennel Powder: 1 tsp
  • Curry Leaves: a handful
  • Oil: 3 tbsp
  • Salt: to taste

Instructions

    Marinate chicken with salt and turmeric.

    Heat oil, add onions and curry leaves. Fry until onions are golden brown.

    Add ginger-garlic paste and green chilies. Sauté for a minute.

    Add the marinated chicken and cook on high heat for 5 minutes.

    Add the coarsely crushed black pepper and fennel powder.

    Cover and cook on low heat until chicken is tender, stirring occasionally.

    Once cooked, increase the heat and fry until the chicken is dry and well-roasted.

    Garnish with more curry leaves and serve hot.
