Egg Pappu (Dal with Egg)

A unique combination of lentils (dal) cooked with eggs.
Ingredients
- Toor Dal (Pigeon Peas): 1 cup
- Eggs: 4
- Onion: 1, chopped
- Tomato: 1, chopped
- Green Chilies: 2, slit
- Tamarind Pulp: 1 tbsp
- Red Chili Powder: 1 tsp
- Turmeric Powder: 1/2 tsp
- Tempering ingredients: Mustard seeds, cumin seeds, curry leaves, garlic
- Oil: 2 tbsp
Instructions

Pressure cook toor dal with turmeric until soft and mushy.

Heat oil in a pan and prepare tempering. Add onions, green chilies and fry.

Add tomatoes and cook until soft.

Add chili powder and cooked dal. Mix well.

Add tamarind pulp, salt, and water to adjust consistency. Let it come to a rolling boil.

Carefully break the eggs one by one into the boiling dal. Do not stir.

Cover and cook on low heat for 5-7 minutes until the eggs are poached and firm.

Serve hot with rice.
