Egg Masala Fry

Boiled eggs stir-fried with onions, tomatoes, and spices.

Ingredients

  • Eggs: 6, hard-boiled and halved
  • Onions: 2 large, thinly sliced
  • Tomatoes: 1 large, chopped
  • Ginger-Garlic Paste: 1 tsp
  • Red Chili Powder: 1 tsp
  • Garam Masala: 1/2 tsp
  • Turmeric Powder: 1/4 tsp
  • Oil: 3 tbsp
  • Salt: to taste

Instructions

    Heat oil in a pan. Add sliced onions and fry until they are deep brown.

    Add ginger-garlic paste and sauté for a minute.

    Add tomatoes and cook until soft.

    Add all the spice powders and salt. Cook for 2-3 minutes until the masala is well cooked.

    Gently place the halved boiled eggs, yolk-side down, into the masala.

    Fry for a couple of minutes, then gently flip and cook the other side.

    Ensure the eggs are well coated with the masala. Serve hot.
