Boiled eggs simmered in a tangy tamarind-based stew.

Ingredients

  • Eggs: 6, hard-boiled
  • Tamarind: small lime-sized ball
  • Onions: 2, finely chopped
  • Green Chilies: 3, slit
  • Red Chili Powder: 1.5 tsp
  • Turmeric Powder: 1/4 tsp
  • Jaggery: a small piece (optional)
  • Oil: 2 tbsp
  • Mustard & Cumin Seeds: 1 tsp for tempering
  • Salt: to taste

Instructions

    Extract pulp from tamarind.

    Make small slits on the boiled eggs.

    Heat oil, add tempering seeds. Add onions and green chilies, fry until golden.

    Add chili powder and turmeric powder.

    Pour in the tamarind pulp and 2 cups of water. Add salt and jaggery.

    Bring the stew to a boil.

    Add the boiled eggs and simmer for 10-15 minutes until the gravy thickens slightly.

    Serve hot with rice.
