A traditional tangy mutton stew from Telangana.
Ingredients
- Mutton: 500g, curry cut
- Tamarind: lemon-sized ball, soaked
- Onions: 2, chopped
- Tomatoes: 1, chopped
- Ginger-Garlic Paste: 1.5 tbsp
- Red Chili Powder: 2 tsp
- Turmeric Powder: 1/2 tsp
- Coriander Powder: 1 tbsp
- Oil: 3 tbsp
- Salt: to taste
Instructions

Pressure cook mutton with salt and turmeric until tender. Reserve the stock.

Extract pulp from the soaked tamarind.

Heat oil in a pan, sauté onions until golden.

Add ginger-garlic paste and fry.

Add tomatoes and cook until soft.

Add chili powder and coriander powder. Sauté for a minute.

Add the cooked mutton and fry for a few minutes.

Pour in the mutton stock and tamarind pulp. Add salt as needed.

Simmer the stew for 15-20 minutes until the gravy thickens and flavors are absorbed.
