Gongura Chicken

A tangy and spicy chicken curry made with fresh sorrel leaves (gongura).
Ingredients
- Chicken: 500g
- Gongura Leaves: 1 large bunch
- Onions: 2, chopped
- Green Chilies: 5-6, slit
- Ginger-Garlic Paste: 1.5 tbsp
- Red Chili Powder: 2 tsp
- Turmeric Powder: 1/2 tsp
- Oil: 4 tbsp
- Salt: to taste
Instructions

Wash and chop the gongura leaves.

Heat 1 tbsp of oil and cook the gongura leaves until they wilt and turn into a paste. Set aside.

In the same pan, add the rest of the oil. Sauté onions until golden.

Add ginger-garlic paste and green chilies. Fry for a minute.

Add the chicken pieces, salt, turmeric, and chili powder. Cook on high heat for 5-7 minutes.

Cover and cook on low heat until the chicken is almost done.

Add the cooked gongura paste and mix thoroughly.

Simmer for another 10-15 minutes, until the chicken absorbs the tangy flavor and the gravy thickens.
