Natu Kodi Pulusu (Country Chicken Stew)

A rustic and flavorful country chicken stew, cooked slowly to perfection.

Ingredients

  • Country Chicken (Natu Kodi): 1 kg, small pieces
  • Onions: 2 large, sliced
  • Tomatoes: 2, chopped
  • Ginger-Garlic Paste: 2 tbsp
  • Green Chilies: 6-8, slit
  • Tamarind Pulp: 2 tbsp
  • Red Chili Powder: 2.5 tsp
  • Turmeric Powder: 1 tsp
  • Coriander Powder: 1 tbsp
  • Cumin Powder: 1 tsp
  • Garam Masala: 1 tsp
  • Oil: 5 tbsp
  • Salt: to taste

Instructions

    Country chicken takes longer to cook. It's best to pressure cook it first with salt, turmeric, and ginger-garlic paste for 4-5 whistles.

    Heat oil in a large pan. Add onions and fry until golden.

    Add the remaining ginger-garlic paste and green chilies. Sauté.

    Add tomatoes and cook until mushy.

    Add all spice powders and cook the masala well.

    Add the pressure-cooked chicken along with its stock. Mix well.

    Add tamarind pulp and adjust salt.

    Add more hot water to achieve a stew-like consistency (pulusu means stew).

    Bring to a boil, then simmer for 15-20 minutes for the flavors to meld.

    Finish with garam masala powder. Serve hot with ragi sankati or rice.
