Telangana Chicken Curry

A traditional chicken curry from Telangana with a rich, spicy gravy.
Ingredients
- Chicken: 1 kg, curry cut
- Onions: 3, finely chopped
- Tomatoes: 2, chopped
- Ginger-Garlic Paste: 2 tbsp
- Green Chilies: 4, slit
- Coconut: 1/4 cup, grated or paste
- Poppy Seeds: 1 tbsp
- Red Chili Powder: 2 tsp
- Turmeric Powder: 1/2 tsp
- Coriander Powder: 1.5 tbsp
- Garam Masala: 1 tsp
- Cinnamon, Cloves, Cardamom: whole spices
- Oil: 4 tbsp
- Salt: to taste
Instructions

Make a paste of coconut and poppy seeds with a little water.

Heat oil in a pan, add whole spices and let them crackle.

Add chopped onions and fry until golden brown.

Add ginger-garlic paste and green chilies, sauté for a couple of minutes.

Add chopped tomatoes and cook until they turn soft.

Add all the spice powders (turmeric, chili, coriander) and salt. Cook until oil separates.

Add the chicken pieces and fry on high heat for 5-7 minutes.

Add the coconut-poppy seed paste and mix well. Cook for another 5 minutes.

Add 2 cups of hot water, bring to a boil. Cover and simmer for 20-25 minutes until chicken is tender.

Finally, add garam masala powder, stir, and cook for another 2 minutes.

Garnish with fresh coriander and serve hot.
