Ingredients
- Chicken: 500g, with bones, small pieces
- Onions: 2, thinly sliced
- Green Chilies: 5-6, slit
- Ginger-Garlic Paste: 1.5 tbsp
- Turmeric Powder: 1/2 tsp
- Red Chili Powder: 2 tsp
- Coriander Powder: 1 tbsp
- Garam Masala: 1 tsp
- Curry Leaves: 2 sprigs
- Oil: 3 tbsp
- Salt: to taste

Marinate chicken with salt, turmeric, and half of the ginger-garlic paste for 30 minutes.

Heat oil in a wide pan. Add sliced onions and sauté until they turn light brown.

Add the remaining ginger-garlic paste, green chilies, and curry leaves. Fry for 2 minutes.

Add the marinated chicken pieces and cook on high heat for 5-7 minutes, stirring frequently.

Add red chili powder and coriander powder. Mix well.

Cover and cook on low heat for 20-25 minutes, or until the chicken is tender. No water is needed as chicken releases its own moisture.

Once cooked, remove the lid, increase the heat to medium-high and fry until the chicken is well-roasted and dry. This could take 10-15 minutes.

Sprinkle garam masala powder, toss well, and fry for another minute.

Garnish with coriander leaves and serve hot as an appetizer or with rice.
