A nomadic-style mutton curry, robust and full of flavor.

Ingredients

  • Mutton: 1 kg
  • Onions: 3, roughly chopped
  • Tomatoes: 2, roughly chopped
  • Yogurt: 1/2 cup
  • Whole Spices: Coriander seeds, cumin seeds, red chilies
  • Garlic: 8-10 cloves
  • Oil: 1/2 cup
  • Salt: to taste

Instructions

    Coarsely grind the whole spices.

    Heat oil, sauté onions and garlic.

    Add mutton and sear.

    Add the ground spices, yogurt, and tomatoes.

    Sauté well until oil separates.

    Add water and cook until mutton is tender.
