Mutton cooked using the pit-roasting method, similar to Khad Khargosh.

Ingredients

  • Mutton Leg or Shoulder: 1 kg
  • Marinade:: Garlic paste, chili powder, salt, turmeric
  • Leaves and Dough: for wrapping

Instructions

    Make deep incisions in the mutton and apply the marinade thoroughly.

    Let it marinate overnight.

    Wrap in leaves, then cover with a thick layer of dough.

    Cook in a sand pit with hot embers for 3-4 hours until the meat is succulent and falls off the bone.
