A simple, rustic mutton curry made with just a few ingredients, traditionally prepared during royal hunts.

Ingredients

  • Mutton: 1 kg
  • Ghee: 1 cup
  • Whole Dry Red Chilies: 15-20
  • Garlic: 1 whole pod, crushed
  • Salt: to taste

Instructions

    Heat ghee in a heavy-bottomed pan.

    Add the mutton pieces and sear on all sides.

    Add salt, crushed garlic, and whole red chilies.

    Sauté for 10-15 minutes.

    Add a little hot water, cover, and cook on low heat until the mutton is extremely tender. The dish has very little gravy.
