Jharkhand

The local version of egg curry, often spicier.

Ingredients

  • Eggs: 6, hard-boiled
  • Onion: 2, chopped
  • Tomato: 2, chopped
  • Ginger-Garlic Paste: 1 tbsp
  • Red Chili Powder: 1.5 tsp
  • Coriander Powder: 1 tsp
  • Oil: 2 tbsp
  • Salt: to taste

Instructions

    Fry boiled eggs in a little oil until golden. Set aside.

    In the same pan, sauté onions until brown.

    Add ginger-garlic paste and tomatoes. Cook into a paste.

    Add spice powders and cook well.

    Add water for gravy, bring to a boil.

    Add the fried eggs and simmer for 10 minutes.
